The Fiano vine is grown in a very large area of Irpinia, but it is believed that originated from Lapio, on the hills east of Avellino. The Paladino comes from the late harvest of Fiano grapes. After careful selection, the grapes are vinified and fermented at low temperature, partly in stainless steel vats and partly in oak barrels. At the end of alcoholic fermentation, the product remains on the lees for a few months before being bottled: this creates the conditions for optimal evolution.
Paladino is a wine that is best enjoyed after ageing where it will have reached its full potential, it is therefore endowed with excellent longevity.
