‘Iddu’ – the local name for the volcano itself – is a straw-yellow wine defined by its vibrant herbaceous reflections and a deep, volcanic soul. It is a “sunny” wine that smells of the sea, offering a nose of lemon peel and orange blossom met by a distinct mineral note reminiscent of wet volcanic stones. While fresh and round on the palate, it is the savoury, lingering finish that truly stands out, accompanied by crisp hints of green apple and a sophisticated, discrete mineral edge.

 

This wine is made partly from a Carricante vine that was regrafted in 2013 on old strains of Nerello Mascalese roots, while the rest comes from old pre-phylloxera ungrafted sapling vines , alongside younger vines planted by Eno Trio themselves.

 

Tended by hand at 650 metres in the renowned Calderara district, the grapes thrive in soil rich in volcanic minerals. In the cellar, Nunzio allows nature to take its course with spontaneous fermentation and aging on the noble lees. Here, he uses periodic bâtonnage – the gentle stirring of the lees – to give the wine its signature roundness and creamy texture without ever losing its volcanic grit. Choosing neither to clarify nor filter, the result is a pure, unfiltered expression of Etna that pairs wonderfully with delicate fish dishes, white meats, and fresh cheeses.
