Avus is the modern reinterpretation of the sparkling wine that Grandpa Tessari loved to bring to the table every day.

 

Made from 100% Garganega grapes, it is bottled by hand and kept in the cellar. As it has not been filtered, a slight deposit made from natural yeasts produced by fermentation is present at the bottom of the bottle.

 

It is characterized by an intense aroma of yellow fruit pulp and honey. The light note of bread crust comes from the yeasts, while the bitter one, the almond, is typical of the Garganega grape.

  • Age of Vineyards: In the family for 3 generations
  • Terroir (soil type): Volcanic, Clay
  • Oak / Steel Fermentation: 3 months in stainless steel tanks in contact with lees and yeast. Unfiltered & bottled with its own yeasts

Food Pairing Suggestions:  Perfect accompaniment to a meal, particularly cured meats, tuna, grilled fish, or shellfish. Also, a surprisingly great pairing with Pizza!

It is recommended to shake the bottle gently so that the characteristic “base” suspends in the wine, giving it the distinctive scent of yeast and bread crust. Then slowly uncork, decant, allow to breath, and the deposits to separate.
